GF Bread

I've had trouble with bread lately. It just didn't work. It was hard, dry, too crunchy, it tasted funny, it fell apart, or whatever. So today I decided to just go back to an old recipe and try to get a somewhat decent bread. And guess what? It wasn't just decent, it was great ! I don't really know what made the difference. Perhaps the cider vinegar. Perhaps the corn flour. Perhaps the fact that I use a smaller baking tin now. Anyway, just look at it !


This doesn't look too bad, does it ?!


Regular Bread, gluten-free

• 350g GF Flour mix
• 150g corn flour
• mixed seeds
• 12g instant yeast
• 2 tablespoons sugar
• 1 teaspoon salt
• 30g butter
• 400ml milk
• 1 tablespoon cider vinegar
• 1 egg

Mix the dry ingrediënts. Add the cider vinegar and some of the milk. Mix well. Add the egg, mix again, then add the rest of the milk. Beat with a mixer for about 3 minutes until you have a smooth dough.
Pour the dough into a buttered bread form or cake tin and let it rise for 45min. Bake in a pre-heated oven at 200°C for 50min.

I found that it works better to use a slightly smaller bread form/tin. I don't know if it's a coincidence, but this bread is moist yet not sticky-moist. Just right, actually. I hope I can repeat this result !
