
Apple Pie
Ingredients:
• 150g rice flour mix
• 75g sugar
• 1 egg
• 75g margarine/butter
• milk as necessary
• 1 t baking soda/baking powder
• 2 apples, chopped in small pieces
Put the flour mix into a large bowl and make a hollow in the middle. Put the sugar, egg, margarine and baking soda into the hollow. Knead well and pour in enough milk necessary to form a homogeneous, not too soft a mixture.
Roll out the pastry until it is the same size in diameter as the baking tin. I used muffin tins, to make mini-pies. Put the dough into a buttered and floured baking tin.
Fill the tin with the apples, or filling of your choice. I also put a little cinnamon on top. Place strips of pastry on the top of the pie, in a grid-like form or just the whole top. Bake in a preheated oven at 175°C, for about 40min for a whole pie.
