Red Chocolate Cupcakes

I wanted to try and make some Red Velvet kind of Chocolate Cupcakes. Unfortunatly, it didn't work out as well as I wanted to, because of the food colouring I used (the only kind I could get my hands on over here), and because of the melted chocolate (hence the batter was too dark to show its red color). But they do taste fine, so ... that 's the most important thing of a cupcake, isn 't it ? :-)
I kind of experimented with this recipe... It 's based on something I got from the internet.

Red Chocolate Cupcakes

Ingredients:
• 125g butter, softened
• 200g sugar
• 2 eggs
• 300g plain flour
• 1 tsp baking powder
• 2 tbs cocoa powder
• 1 cup milk
• 100g dark chocolate, melted
• Red food coloring (lots of it !)

Preparation:
Preheat the oven to 160°C.

Place the butter and sugar in the bowl and beat until light and creamy.
Gradually add the eggs and beat well. Sift over most of the flour, baking powder and cocoa and beat until combined.
Fold through the milk, the rest of the flour, and stir in the chocolate. Mix well.
Spoon the mixture into muffin tins lined with paper pattycases.
Bake for 10-12 minutes or until cooked when tested with a skewer. Cool on wire racks.
