Eierkoeken (Eggcakes)

Eggcakes are famous in Belgium and the Netherlands. They are a delicious Dutch breakfast cake, usually served spread with butter, or jam.

• 275 g Sugar
• 70 g Butter
• 2 dl Milk
• 1 Egg
• 500 g Flour
• 1 tps Baking Soda

Mix the sugar, butter, milk and egg together. Add the flour and baking soda. Knead short, until the dough is homogeneous.
Make a ball of the dough, cover it and put in the fridge for a least a night.
Take pieces of 50 or 60 g of dough, make little balls and flatten them slightly. Put on a oven plate (with baking paper). Cover them slightly with beaten egg (or water) and put some sugar (and cinnamon) on them.
Bake the eggcakes in the oven at 200 °C until they are golden brown.
